Stuffing Recipes for Turkey

Yes, we can’t believe it either; it’s that time of year again. With Christmas almost two weeks away it’s time to start preparing, to make this year the best one yet! So, why not start with the star of the show, the food!

Nothing is more important for a Christmas meal than the turkey, and you can’t have a good turkey without stuffing. This is why we’ve compiled a list of our favourite stuffing recipes from the BBC Good Food website to make your Christmas dinner stand out.

Sausage, Sage & Onion Stuffing

Difficulty: Easy

Prep: 20 mins

Cook: 40 mins

Serves: 8-10

Ingredients

  • 2 sliced onions
  • 25g butter
  • 1 small Bramley apple, peeled, cored and diced
  • 2 x 400g packs of Cumberland sausage, removed from their skins
  • 1 handful sage, chopped, plus extra for topping
  • Extra sage for topping
  • 140g granary breadcrumbs

Method

  • Fry onions in butter for 5 mins, then add apple and cook briefly
  • Leave to cool
  • mix with Cumberland Sausage, sage, granary breadcrumbs and seasoning
  • Stuff the neck end of the turkey and roll leftovers into balls. OR pack the whole mixture into a 1kg loaf tin and top with extra sage
  • Bake with the turkey for the last 30-40 mins OR 180°c for 30-40 as a loaf
  • Drain fat and served sliced

Don’t be surprised if you have your guests fighting over the last piece of this one. This stuffing has a wonderful texture and a flavour to die for. Having this turkey stuffing on Christmas is a definite must-have. Plus, the benefit of being able to freeze it before you cook it means that you can be well prepared!

This is a very forgiving recipe. Meaning that you mix and match some of the ingredients. For example, you could leave out the Bramley apple and instead add cranberries, a few chopped figs or nothing at all. It’ll still taste great!

Vegetarian Apricot & Hazelnut Stuffing

Vegitarian Apricot & Hazlenut Stuffing For Turkey

Cook: 30mins

Ingredients

  • 2 large onions, chopped
  • 50g butter
  • 50g hazelnut, chopped
  • 140g ready-to-eat dried apricots, chopped
  • 175g fresh white breadcrumbs
  • 20g pack parsley, chopped
  • finely grated zest of 1 lemon
  • 1 egg, beaten
  • olive oil, for drizzling

Method

  • Fry onions in butter. Stir in nuts until golden
  • Remove from heat, add apricots, breadcrumbs, parsley and lemon zest.
  • Stuff the neck end of the turkey and roll leftovers into balls. OR pack the whole mixture into a loaf tin
  • Bake with the turkey for the last 30-40 mins OR 180°c for 30-40 as a loaf
  • Drain fat and served sliced Mix in egg and seasoning

This sure is another stuffing that will cause some arguments on who gets the last piece, but it’s so worth it. With this recipe not containing any meat, it means that there’s something for everyone’s dietary needs this Christmas. Use this with a variation of vegetarian dishes as well to satisfy everyone.

The delicious recipe adds a lovely sweetness to any Christmas dinner. Even for meat eaters, this recipe will go down a treat!

Chestnut, Bacon & Cranberry Stuffing

Chestnut, Bacon & Cranberry Stuffing For Turkey

Difficulty: Easy

Prep: 30-40 mins + 60 mins to soak cranberries

Cook: 30mins

Serves: 10-12

Ingredients

  • 100g dried cranberries
  • 50ml ruby port
  • 1 small onion, chopped
  • 2 rashers unsmoked back bacon, cut into strips
  • 50g butter
  • 2 garlic cloves, chopped
  • 450g Cumberland sausage, without skin
  • 140g fresh breadcrumbs
  • 1 handful chopped parsley
  • ½ tsp chopped thyme leaves
  • 140g peeled, cooked chestnuts, roughly chopped
  • 1 medium egg, lightly beaten

Method

  • Soak Cranberries in port for 60 mins.
  • Fry onion and bacon in butter, until onion is tender and bacon is cooked
  • Add garlic and fry briefly
  • Let cool slightly, then mix in remaining ingredients by hand, including cranberries and port, adding enough egg to bind
  • Stuff the neck end of the turkey and roll leftovers into balls. OR pack the whole mixture into a loaf tin
  • Bake with the turkey for the last 30-40 mins OR 180°c for 30-40 as a loaf
  • Drain fat and served sliced Mix in egg and seasoning

This recipe has gone down as a treat in our houses many a time, everyone seems to love it. This is the perfect recipe for any meat lovers Christmas dinner with it being packed full of sausage!

Similarly to the first, there is lots of wiggle room for experimenting. If you cant get your hands on some port, for example, orange juice or even boiling water works a treat.
